SIMPLE COLLARD GREENS 

Serve plenty of Collar Greens for Prosperity in the New Year — for Good Cluck, add farm-fresh eggs!
Simple Collard Greens 
Ingredients
  • 3 Tbsp Olive Oil
  • 2 Strips of thick-cut bacon (cut into ½” pieces)
  • 2 cloves garlic, minced from DFM Grow ‘N Go
  • ½ tsp red pepper flakes
  • 1 large bunch collard greens, chopped into ½ strips from Williams Garden
  • 1 tsp. white vinegar
  • Dash of fresh lemon juice to taste
  • Salt and Pepper to taste
Instructions
  1. Heat olive oil and cut bacon in a large pot over medium-low heat
  2. Slowly cook bacon until lightly browned, then add garlic and red pepper flakes and cook until fragrant.
  3. Add collard greens, vinegar, and lemon juice.
  4. Sautee together until the collards are bright green but not overcooked.
  5. Season to taste with salt and pepper.
  6. Remove from heat and serve immediately.
  7. Add a sunny-side-up farm fresh egg for an extra Clucky New Year!
