INGREDIENTS
(Makes 1 Cocktail)
- 2-3 oz gin or vodka
- 3 oz. grapefruit juice
- 1 tbsp Rosemary simple syrup*
- 1 can club soda
- 2-3 rosemary sprigs, for garnish

- 1 cup water
- 1 cup sugar
- ¼ cup rosemary, stripped from stem
INSTRUCTIONS
- First, you have to make your rosemary simple syrup. Combine the water, sugar, and rosemary in a small saucepan over medium heat.
- Bring to a boil while stirring, until the sugar has dissolved.
- Simmer for 1 minute, remove from heat, and let the syrup sit for at least 30 minutes.
- After 30 minutes, pour your syrup into a jar through a fine mesh colander to remove rosemary leaves, and store in the fridge for safekeeping until use.
- Next, combine your gin or vodka, your grapefruit juice, and your rosemary simple syrup in a cocktail shaker with ice.
- Shake vigorously to combine.
- Pour into a Collins glass filled with ice. Top with a splash of club soda and garnish with rosemary sprig. Enjoy responsibly!
