BUFFALO CAULIFLOWER BITES

  • 1 head cauliflower from D-Bar Farms
  • 1 cup plain yogurt from Jersey Girls
  • 1 cup corn meal from Homestead Gristmill
  • 1 egg from Bois d’Arc Meat Co.
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp cayenne
  • 1/2 tbsp garlic powder
  • 1/2 cup hot sauce from Klowns on Fire
  • 1 cup butter

INSTRUCTIONS:

  1. Preheat oven to 375F.
  2. Cut cauliflower into bite size florets.
  3. Mix plain yogurt, corn meal and egg. Add water if needed until mixture is thick enough to stick to cauliflower but thin enough to completely coat the batter.
  4. Add salt, paprika, cayenne and garlic powder to batter.
  5. Toss cauliflower bites in batter to coat.
  6. Add cauliflower bites to parchment line baking tray.
  7. Bake for 20 minutes, turning halfway through.
  8. Allow to cool and coat with preferred sauce.

BUFFALO SAUCE:

  1. Melt butter in small sauce pan over medium heat.
  2. Stir in hot sauce until well blended.
