“FRIED” PICKLES
- 1 pint T-Rex Pickles
- 1 cup yogurt from Jersey Girls
- 1 egg from Bois d’Arc Meat Co.
- 1/2 corn meal from Homestead Gristmill
- 1 tsp salt
- 1 tbsp chopped cilantro
INSTRUCTIONS:
- Preheat oven to 350 F
- Mix together 1/2 cup yogurt and 1 egg. (Reserve additional 1/2 cup for dipping sauce.)
- Coat pickles in yogurt/egg base.
- Cover both sides of pickles with an even layer of corn meal.
- Arrange pickles on baking sheet and cook for 20 minutes, turning over halfway through.
- Remove from oven and allow to cool.
DIPPING SAUCE:
- Mix reserved yogurt with cilantro and salt.
- Enjoy!
