“FRIED” PICKLES

  • 1 pint T-Rex Pickles
  • 1 cup yogurt from Jersey Girls
  • 1 egg from Bois d’Arc Meat Co.
  • 1/2 corn meal from Homestead Gristmill
  • 1 tsp salt
  • 1 tbsp chopped cilantro

INSTRUCTIONS:

  1. Preheat oven to 350 F
  2. Mix together 1/2 cup yogurt and 1 egg. (Reserve additional 1/2 cup for dipping sauce.)
  3. Coat pickles in yogurt/egg base.
  4. Cover both sides of pickles with an even layer of corn meal.
  5. Arrange pickles on baking sheet and cook for 20 minutes, turning over halfway through.
  6. Remove from oven and allow to cool.

DIPPING SAUCE:

  1. Mix reserved yogurt with cilantro and salt.
  2. Enjoy!
