We’re melon crazy for these colorful and delicious Marinated Mozzarella Melon Skewers. πŸ‰ A perfect way to use all those local melons!

INGREDIENTS

  • 1/3 cup basil pesto
  • 2 cups fresh mozzarella balls
  • 4 cups mixed melon balls
  • 1-2 cups fresh basil leaves
  • 3 ounces prosciutto (optional)

BALSAMIC VINAIGRETTE

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic or champagne vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 2 teaspoons fig preserves/jam
  • kosher salt and black pepper
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh mint (optional)

INSTRUCTIONS
STEP 1
In a bowl, toss together the pesto and mozzarella balls.
STEP 2
To make the vinaigrette. Combine all ingredients in a glass jar and shake, or whisk to combine. Season with salt and pepper.
STEP 3
To assemble, thread the prosciutto (if using), melon balls, cheese, and basil onto skewers. You can mix and match your skewers or make them all the same.
STEP 4
Arrange on a serving plate and serve drizzled with the vinaigrette.Β
