INGREDIENTS

  • 1.5 lbs Leg of Lamb from JuHa Ranch
  • ½ cup Olive Oil
  • Finely Chopped Fresh Herbs – Thyme, Oregano, Basil, Rosemary
  • Whole Leaf Herbs to garnish
  • Salt and Pepper to taste

INSTRUCTIONS

  1. Place lamb in a ceramic baking dish. Lightly season each side of lamb with salt, pepper, and freshly chopped herbs. Fully coat both sides.
  2. Pour olive oil over the seasoned lamb, cover, and let marinate for 2 hours in the refrigerator or overnight.
  3. Preheat oven to 350 F. Roast lamb in oven for about 30 minutes. Check internal temperature using a meat thermometer. Lamb is fully cooked when it reaches 145 F.
  4. Remove from oven and allow to cool for about 15 minutes.
  5. Serve with a side of seasonal vegetables such as roasted carrots or collard greens.
