INGREDIENTS
- 1.5 lbs Leg of Lamb from JuHa Ranch
- ½ cup Olive Oil
- Finely Chopped Fresh Herbs – Thyme, Oregano, Basil, Rosemary
- Whole Leaf Herbs to garnish
- Salt and Pepper to taste
INSTRUCTIONS
- Place lamb in a ceramic baking dish. Lightly season each side of lamb with salt, pepper, and freshly chopped herbs. Fully coat both sides.
- Pour olive oil over the seasoned lamb, cover, and let marinate for 2 hours in the refrigerator or overnight.
- Preheat oven to 350 F. Roast lamb in oven for about 30 minutes. Check internal temperature using a meat thermometer. Lamb is fully cooked when it reaches 145 F.
- Remove from oven and allow to cool for about 15 minutes.
- Serve with a side of seasonal vegetables such as roasted carrots or collard greens.
