Ingredients
  • Double Pie Crust (Homemade or Pre-made)
  • 3 lbs Apples
  • ½ brown sugar
  • ½ granulated sugar
  • 2 tsp vanilla extract
  • 1/3 cup all-purpose flour
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tablespoons unsalted butter
  • Sugar Candy Eyes
Instructions
  1. Preheat oven to 375 F. Prepare pie crust in a 9″ pie pan and chill in the refrigerator.
  2. Peel and core apples, cutting into 1/8th slices.
  3. Toss prepared apples with brown sugar, granulated sugar, vanilla extract, salt, and spices. Allow the spiced apples to rest for about 1 hour.
  4. Drain the spice and juice mixture from the apples and transfer to a small saucepan.
  5. Simmer the juices over medium heat until thickened. Remove from heat and allow to cool.
  6. Lightly coat and toss the drained apples with all-purpose flour.
  7. Remove pie crust from the refrigerator and fill with apples and thickened juices.
  8. Lightly brush the rim of the lower pie crust with butter and drape the upper crust over the apples.
  9. Seal top and bottom crust by lightly pressing them together with a fork.
  10. Place sealed apple pie on a parchment paper-lined baking sheet to catch any overflow.
  11. Brush the top of the pie crust with melted butter and bake for 1 hour.
  12. Let the pie cool to room temperature, top with sugar candy eyes, and enjoy a spooky seasonal treat!
