Ingredients:
  • 3 pounds of golden potatoes from Kelley Produce
  • 1 celery stalk from Kelley Produce or Williams Garden
  • 1 small yellow onion from Kelley Produce, Williams Garden, Heddin Family Farm
  • ½ cup of mayonnaise from Kelley Produce
  • 10 boiled eggs from Hendrix Family Farms, Williams Garden, Texas Forest Farm
  • ¼ cup of sweet relish
  • 2 tablespoons of Cajun seasoning from Gaia’s Cuisine, Uncle Marc’s
  •  Salt and Pepper to taste
Instructions:
  1. Wash and boil potatoes. Dice the cooked potatoes into cubes and place them in a mixing bowl. Finely chop the celery and onions; add to mixing bowl. Separate the egg whites from the egg yolks; chop the egg whites and add to mixing bowl. Mash the egg yolks, mayonnaise, and sweet relish to make a sauce then add to mixing bowl. Add in the Cajun seasoning, salt, and pepper. Best to make this recipe while the potatoes are still warm to evenly combine everything. Refrigerate for a few hours then serve!
