Repurpose your leftover pulled pork into an elevated appetizer with these bite-sized treats!
INGREDIENTS
- 24 phyllo pastry shells (can be premade or from scratch if you’re up for a challenge!)
- 1 cup repurposed pulled pork from 413 Farms
- 4 oz goat cheese from Lost Ruby Ranch
- 2 oz blueberry jam from Rockin JR Ranch
- 1 tbsp parley from Williams Garden
INSTRUCTIONS
- Preheat oven to 350 F and rest phyllo shells in a mini-muffin pan. Prebake according to instructions or if baking from scratch.
- Fill each phyllo shells half way with pulled pork.
- Mix blueberry jam and goat cheese together until combined. Fill remaining space in phyllo shells with goat cheese mixture on top of the pork.
- Bake for about 10 minutes until goat cheese and pork are heated all the way through. If you want to avoid burning the edges of your phyllo cups, you can cover with aluminum foil for the second bake.
- Remove from oven and garnish with parsley. Enjoy!
