Brandon Hurtado grew up in the Central Texas tradition — where barbecue isn’t a style, it’s a standard. When he opened inside The Market Building at Dallas Farmers Market, he brought that standard with him: post-oak smoke, brisket that’s never rushed, and the kind of fat-cap bark that tells you everything was done right.

The line out the door on Saturday mornings isn’t a mystery. It’s what happens when a pitmaster doesn’t compromise. The brisket is smoked overnight. The jalapeño cheddar sausage is house-made. The ribs are trimmed the way a Central Texas pit expects them — not rubbed into submission, just seasoned and trusted.
