INGREDIENTS

  • Rotini Pasta (short corkscrew shape)
  • 1 Cucumber sliced in rounds then cut into 4ths 
  • Handful of cherry tomatoes cut in halves or 4ths 
  • ¼ Red Onion thinly sliced and halved 
  • 1/8 cup of Olive Oil
  • 2 tbsp of Apple Cider Vinegar 
  • 1 tsp Dill (Dried or Fresh)
  • Salt to Taste

INSTRUCTIONS
STEP 1
Cook pasta according to individual instructions – slightly al dente is best for this recipe. Drain and toss with olive oil.
STEP 2
Add in cucumbers, cherry tomatoes, and red onion and toss with pasta.
STEP 3
Add additional olive oil to coat vegetables and pasta. Add apple cider vinegar, dill, and salt to taste.
STEP 4
Refrigerate to chill or serve right away!
