Ingredients

  • 1 cup pumpkin puree
  • 3 eggs
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cinnamon (optional)
  • 1/2 teaspoon pumpkin pie spice (optional)
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Heat a large skillet over medium heat.
  2. Whisk all ingredients together in a large bowl.
  3. Grease skillet with non-stick spray or butter.
  4. Drop pancake batter by the spoonful onto skillet.
  5. Let cook for 2-3 minutes, or until browned on each side.
