INGREDIENTS

  • 1 lb ground beef
  • 4 large bell peppers (yellow, red, or orange)
  • ½ Onion
  • 2 Cloves Garlic
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 2 tbsp Fresh Cilantro
  • 4 oz Smoked Cheddar
  • 4 oz Sour Cream

INSTRUCTIONS

  1. Preheat grill to 350 degrees
  2. Add ground beef, diced onion, and minced garlic to mixing bowl. Mix thoroughly.
  3. Add salt, black pepper, cumin, paprika, and chopped fresh cilantro to mixing bowl. Mix thoroughly.
  4. Crumble mixture onto aluminum foil and create a sealed packet. Grill for 5 minutes on one side, flip, and grill an additional 5 on other side.
  5. Remove tops of bell peppers and de-seed. Fill with ground beef mixture and return tops to bell peppers.
  6. Grill bell peppers for 8 minutes with grill lid closed. Remove from heat and discard bell pepper tops.
  7. Top with shredded smoked cheddar and sour cream.
