INGREDIENTS
- 1 lb ground beef
- 4 large bell peppers (yellow, red, or orange)
- ½ Onion
- 2 Cloves Garlic
- 1 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Cumin
- 1 tsp Paprika
- 2 tbsp Fresh Cilantro
- 4 oz Smoked Cheddar
- 4 oz Sour Cream
INSTRUCTIONS
- Preheat grill to 350 degrees
- Add ground beef, diced onion, and minced garlic to mixing bowl. Mix thoroughly.
- Add salt, black pepper, cumin, paprika, and chopped fresh cilantro to mixing bowl. Mix thoroughly.
- Crumble mixture onto aluminum foil and create a sealed packet. Grill for 5 minutes on one side, flip, and grill an additional 5 on other side.
- Remove tops of bell peppers and de-seed. Fill with ground beef mixture and return tops to bell peppers.
- Grill bell peppers for 8 minutes with grill lid closed. Remove from heat and discard bell pepper tops.
- Top with shredded smoked cheddar and sour cream.
