Ingredients:

  • 2 large grapefruits (may substitute with 4 large oranges or 6 lemons) from Kelley Produce
  • ¼ cup light corn syrup
  • 2 cups of sugar
  • 1 cup of hot water

 

Instructions:

  1. Wash citrus
  2. Remove peel in quarters (remove pulp and membrane)
  3. Cover peel with cold water and bring to a boil
  4. Cook 20 minutes
  5. Drain off water and repeat process. Boil until tender. Remove inner white membrane.
  6. Cut peel in ¼ inch strips
  7. Combine corn syrup, sugar and hot water
  8. Cook over low heat, stirring until sugar is dissolved
  9. Add citrus peel and cook to 230 degrees F
  10. Peel will be transparent and most of the syrup will be absorbed
  11. Remove peel from syrup, drain
  12. Roll each strip in granulated sugar
  13. Store in tin
