Ingredients:
- 2 large grapefruits (may substitute with 4 large oranges or 6 lemons) from Kelley Produce
- ¼ cup light corn syrup
- 2 cups of sugar
- 1 cup of hot water
Instructions:
- Wash citrus
- Remove peel in quarters (remove pulp and membrane)
- Cover peel with cold water and bring to a boil
- Cook 20 minutes
- Drain off water and repeat process. Boil until tender. Remove inner white membrane.
- Cut peel in ¼ inch strips
- Combine corn syrup, sugar and hot water
- Cook over low heat, stirring until sugar is dissolved
- Add citrus peel and cook to 230 degrees F
- Peel will be transparent and most of the syrup will be absorbed
- Remove peel from syrup, drain
- Roll each strip in granulated sugar
- Store in tin
