Kicking spring off with a seasonal + festive carrot cocktail. This spring margarita features sweet carrot juice, fresh ginger beer, and of course, tequila! This carrot margarita uses bottled 100% carrot juice, we used JuiceBabe’s bottled juice and made this so simple to whip up.

  1. Salt or sugar the rim of two rocks glasses; fill with ice. 
  2. Fill a cocktail shaker with ice (we used our mason jar). 
  3. Add 5 ounces of JuiceBabe carrot juice + 3 ounces tequila blanco + 1 ½ ounce jalapeño lime Soco Ginger Beer to shaker. 
  4. Secure lid on shaker and shake until chilled. 
  5. Strain carrot margarita into prepared glasses and garnish with carrot tops.
