Chocolate-in-Betweens are the chewy Christmas Cookie my Gigi sent us every year in a season metal tin, usually with a jolly Santa Claus on top! Gigi never gave a second thought to the mess I managed to make with her food processor when she showed me how to make this beloved family recipe. My Christmas gift to our readers this year is a recipe from my family to yours!
Gigi’s Chocolate In-Betweens
Ingredients
  • 1 cup packed brown sugar
  • ¾ cup butter, chilled
  • ½ tsp salt
  • 1 ½ cup all-purpose flour
  • 1 cup rolled oats
  • 1 (14 oz) can sweetened condensed milk
  • 1 ¼ cup semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Lightly coat a 9″x13″ baking dish and set aside.
  2. Add flour, salt, and butter to a food processor and pulse until a sandy mix is formed.
  3. Add brown sugar and oatmeal and pulse until oats are chopped and incorporated but still visible.
  4. Pour half the mixture into the prepped baking dish and press down to create a bottom layer. Reserve the other half and set aside.
  5. Mix sweetened condensed milk and chocolate chips in a medium saucepan over low heat, stirring constantly to prevent burning. Continue stirring until completely smooth.
  6. Use a rubber spatula to transfer the melted chocolate mixture on top of the oat layer in the baking dish, and smooth out in an even layer.
  7. Pour the remaining oat mixture over the chocolate layer and gently press down without pushing through the chocolate layer.
  8. Bake 25 – 30 minutes, until lightly browned.
  9. Remove from oven and let cool completely in the baking dish.
  10. Cut into squares — serve, share, and enjoy!
