Q – What is the inspiration behind your business? Is there a specific event that led you to create your own business or a reason that you decided to make the product you have?
A – Fortune Cat: The inspiration behind my business comes from my passion for food, exploration of food culture, and enjoying sharing food with others. I attended the 2013 Texas State Fair as a visitor. I was so moved by the Texans’ love of food that I started my own entrepreneurial journey.

Q – Does the Dallas Farmers Market provide a place to connect with others who share your cultural heritage? If so, how do those connections support your success at DFM?
A – ChaiwaliTX: The best compliments I receive are always from South Asian people who try my chai and tell me “this is better than what mom makes at home!”

Q – What is your favorite homemade meal? Can we have the recipe? 😊
A – Miss Modi: My favorite homemade food is the Chinese tomato egg stir-fry. It’s easy to make, healthy and nutritious.

1 person serving / Ingredients:

  • 2-3 tomatoes
  • 2-3 eggs
  • 2 stalks of scallion

Instructions:

  1. Start by cutting tomatoes into small wedges.
  2. Finely chop the scallion. Then crack the eggs into a bowl and season with ¼ teaspoon salt, ¼ teaspoon white pepper, ½ teaspoon sesame oil, and 1 teaspoon Shaoxing wine (optional). Beat eggs for a minute.
  3. Preheat the wok over medium heat until it just starts to smoke. Then add 2 tablespoons of oil and immediately add the eggs. Scramble the eggs and remove from the wok immediately. Set aside.
  4. Add 1 more tablespoon oil to the wok, turn up the heat to high, and add the tomatoes and scallions.
  5. Stir-fry for 1 minute, and then add 2 teaspoons sugar, 1/2 teaspoon salt (or to taste), and ¼ cup water (if your stove gets very hot and liquid tends to cook off very quickly in your wok, add a little more water). Add the cooked eggs.
  6. Mix everything together, cover the wok, and cook for 1-2 minutes, until the tomatoes are completely softened.
  7. Uncover, and continue to stir-fry over high heat until the sauce thickens to your liking. Serve with steamed rice.
