WHIPPED FETA WITH ROASTED BALSAMIC STRAWBERRIES

INGREDIENTS
Roasted Strawberries:

  • 2 lbs fresh strawberries from Sanchez Farms
  • 2 Tbsp balsamic vinegar from Texas Olive Ranch
  • 2 tsp honey from Bonton Farms

Whipped Feta:

  • Approx. 8 oz feta cheese from Lost Ruby Ranch
  • 1/2 cup plain greek yogurt from Jersey Girls in Market Provisions
  • 2 Tbsp olive oil from Texas Olive Ranch
  • Black pepper, to taste

Serve With:

  • Fresh basil, chopped from Braga Farms
  • Sourdough crostini’s from D’s Sourdough

INSTUCTIONS

  1. Preheat oven to 350F and line a large baking sheet with parchment paper or a silicon baking mat
  2. Wash strawberries and remove stems. Slice each berry in half and add to a medium sized bowl.
  3. Whisk balsamic vinegar and honey together. Drizzle over strawberries and toss until combined.
  4. Spread strawberries in an even layer on baking sheet, then transfer to the oven and roast for about 30-35 minutes until soft and fragrant.
  5. While the strawberries bake, make the whipped feta by adding the feta cheese, Greek yogurt, olive oil, and pepper to a food processor. Blend ingredients together for a few minutes until smooth, scraping down with a spatula as needed. Transfer to the fridge and chill until thickened.
  6. When strawberries are done roasting, remove them from the oven and allow to cool for 5-10 minutes. Once cooked, allow the strawberries it chill in the refrigerator.
  7. Serve strawberries and whipped feta either lightly swirled together or in separate bowls for spooning out and dipping. Garnish with freshly chopped basil, an extra drizzle of olive oil, and a sprinkle of black pepper.
