The Dallas Farmers Market is excited to announce that Insurgent is bringing its bold, anything-goes energy to The Market this fall. What began as a Denton food trailer (2024 Food Truck Championship of Texas Grand Champion) almost five years ago quickly became a creative playground for CIA-trained chefs Sam Lopez and Gabby Lopez, and Executive Sous Chef Alec Sanders. With menus shaped by local harvests, personal influences, and whatever sparks their curiosity that week, they cook what inspires them and waste nothing along the way.

Now, with a permanent home at The Market, Insurgent expands that same independent spirit into something bigger, transforming a food space into an evolving culinary experience with chef’s counter tastings, reservation-based dinners, and after-hours supper clubs. It’s a format that gives the team room to push further, experiment more freely, and invite guests into the process in a way the trailer never could.
