INGREDIENTS

  • 4 sweet potatoes – peeled and cubed
  • 1 tbsp olive oil
  • Dash of cinnamon 
  • Dash of paprika
  • Dash of salt
  • 4 fresh eggs

INSTRUCTIONS
STEP 1
Preheat oven to 375 degrees and line baking sheet with parchment paper.
STEP 2
Evenly distribute cubed sweet potatoes across the baking sheet. Lightly coat with olive oil to avoid sticking and sprinkle with cinnamon, paprika, and salt.
STEP 3
Cook for 15 minutes, then turn sweet potatoes and cook for another 10 minutes until soft.
STEP 4
Use a spatula to make room for 4 eggs on the baking tray. Crack the eggs – careful not to break the yolks! (Cold eggs work best).
STEP 5
Turn oven to a high broil and insert tray to cook for another 4 minutes or until sweet potatoes begin to crisp and eggs are cooked to your preference.
